淮扬面点和小吃

[align=center]面点和小吃是淮扬菜系的重要组成部分,以历史悠久、制作精致、品种多样、风味佳美闻名于世。

  淮扬面点始于秦汉之际,小吃的出现不晚于隋唐之时。如唐代,鉴真大师东渡日本时,就曾携带大量的胡饼、蒸饼、薄饼、捻头(馓子)、牛苏(牛酥)作路粮。扬州另有著名面点聚香团,也充分证明淮扬面点、小吃品种早就比较丰富了。明代,淮扬面点、小吃的品种很多。清代,淮扬面点、小吃发展迅速,技艺更精,影响更大。据《随园食单》《扬州画舫录》等书记载,当时著名面点、小吃有素面、裙带面、千层馒头、小馄饨、运司糕、洪府粽子、酥儿烧饼、灌汤包、烧卖、油镟饼、松毛包子、淮饺、甑儿糕、三鲜面、伊府面、应时春饼、荷叶甲、火腿粽、茯苓糕、锅贴角、加料干丝、羊杂碎等。在制作上,则面条多重视制汤、制浇头;馒头重视发酵;烧饼讲究擦酥、用馅;包子、饺子注重馅;糕追求松软;肉制品更重视味的把握。而有些品种还刻意求工,追求小巧,如小馒头仅有胡桃大,小馄饨小如龙眼。此外,清代扬州不少茶肆还把饮茶、吃面点小吃结合起来,故深受顾客欢迎。清人《望江南》写道:“扬州好,茶社客堪邀。加料干丝堆细缕,熟铜烟袋卧长苗。烧酒水晶肴。”正是当年扬州茶社社风情的生动写照。总之,到了清代,淮扬面点、小吃已经成为中国面点、小吃的重要流派,在江浙、北京、四川等地均有影响。20世纪二三十年代,淮扬面点又有发展,扬州的三丁包子、翡翠烧卖、千层油糕脱颖而出,而淮安的汤包、茶馓影响也很大。

  新中国成立后,尤其是近二十多年来,在富春茶社等名店及徐永珍、董德安、郑连安、陈兴长等一批面点名师的推动下,淮扬面点、小吃在继承、创新两方面均取得骄人业绩。目前,淮扬点心面团以嫩酵、温水面团、油酥(含酥面皮酥)为主;品种以点心及面条为主;包子、饺子等点心以薄皮大馅、皮馅相宜、馅多变、制作精细、突出时令而擅长;面条柔韧,或以“白汤面”著称,或以浇头繁富而扬名;观赏点心发端于祭点、席点、船点,以设计精巧、色彩雅丽、栩栩如生而名闻遐迩。值得重视的是,近十多年来,随着中外饮食文化交流的不断深入,淮扬面点、小吃在国际上也声誉日著。如富春茶社就在日本开设了分店,而扬州速冻包子也批量出口东南亚、日本等地,受到了广泛好评。
